
Caramel Cake
Description
The pastry is easy and quick to make. This colorful cake has a bright apple-caramel flavor followed by the most delicate cottage cheese aftertaste. Serve the dessert with hot tea or coffee. It is especially welcome in summer, when you crave a slice of cold, sweet cake. The pastry is ready. Serve it to the table.

Prepare the listed ingredients. Apples of any variety can be used.

Crush the shortbread cake layers or cookies into crumbs. Place the butter in a deep bowl and melt it in the microwave or over a double boiler. Pour the crumbs in and mix.

Boil water and pour it into a bowl, add the gelatin and leave it to bloom for 5–10 minutes. Then stir again.

Place the moist shortcrust crumbs into a springform pan and press them down with the bottom of a bowl or glass, slightly going up the sides. Press the sides down with your hands. Place the pan in the freezer for 5–10 minutes.

Place the cottage cheese, sour cream, and 75 grams of granulated sugar into a cup for an immersion blender and puree for about 3-4 minutes. Then pour in half of the liquid with gelatin and puree again.

Pour the cottage cheese cream onto the layer of shortbread crumbs in the pan. Place in the freezer for 20 minutes or in the refrigerator for 1 hour.

Peel the apples and rinse them in water. Remove the seed cores and cut into large cubes. Pour the chopped apples into a saucepan or a frying pan with high sides.

Add the sugar and place the container on the stove; simmer the sliced apples for about 5–8 minutes. So that they do not lose their shape, but release juice and it mixes with the sugar, forming a syrup. Then turn off the heat, pour in half of the gelatin liquid, and stir.

Remove the pan from the refrigerator and place the sliced apples in syrup onto the cottage cheese layer. Chill again in the refrigerator for at least 1–2 hours.

When serving, cut the chilled cake into individual portions.
