    Scald the lemon with boiling water to prevent the peel from being bitter. Then cut off the ends and remove them. Slice the fruit into not-too-thin rounds so they don't fall apart in the caramel. Do not discard the juice—it will be needed when cooking the caramel.

    Pour the sugar into a wide pan with high sides. Add hot water and the lemon juice left over from slicing the lemons. Place the pan on the stove over medium heat.

    Wait until the sugar melts and the sugar syrup turns a caramel color. Turn off the heat, otherwise the syrup will quickly burn and turn black, acquiring a bitter taste.
