Instructions
- 1
Step 1

Prepare the listed ingredients. You can use fresh or smoked bacon.
- 2
Step 2

Pour the sugar and salt into a non-stick skillet or a cast-iron skillet. Add water and place the pan on the stove over medium heat. It is advisable to add a couple of drops of lemon juice or a pinch of citric acid so the sugar does not crystallize again; this can happen when heating a low-quality product.
- 3
Step 3

In about 3–5 minutes, the sugar will turn into caramel; wait until it becomes a beautiful brown color. Remember that at this stage the caramel can burn very quickly!
- 4
Step 4

Place the bacon strips in the caramel, heat for about 1 minute on minimum heat.
- 5
Step 5

Then flip them over to the other side and fry for another minute as well. Turn off the heat.
- 6
Step 6

Place the caramelized bacon on a plate and sprinkle with any chopped aromatic herbs.
- 7
Step 7

Serve the dish warm.
