
Caramel made from sugar and water
Description
The recipe won't take much time. Even without butter and milk, you can make a colorful, chewy caramel for decorating desserts or serving with sweet pastries. You'll only need 10–15 minutes. Serve chilled.

Prepare the listed ingredients. Don't forget to add citric acid or lemon juice to prevent the sugar from crystallizing during cooking.

Pour the sugar into a heavy-bottomed pot or a non-stick saucepan. Add lemon juice or substitute it with citric acid.

Pour in the water and place the container on the stove over medium heat. Gently stir and watch the caramel as it cooks. First, large transparent bubbles will form.

After 3-5 minutes, the bubbles will turn caramel in color. At this stage, turn off the heat. Do not let the syrup reach a brown color, as it is extremely hot and will continue boiling for about 2 minutes after turning off the heat!

Pour the hot caramel into a jar or another heat-resistant container, and serve warm with cookies, sweet pastries, and tea.
