Prepare the ingredients for the cabbage pie.

Dissolve the yeast in warm milk (about 30°C), gradually adding part of the sifted flour (0.5–0.75 cups).

Make the sponge (consistency like liquid sour cream). Cover and let it sit in a warm place for 30–40 minutes. Place the butter nearby so it becomes very soft.

Then add softened butter, sugar, and salt to the sponge. Mix until the sugar and salt are dissolved.

Gradually adding the remaining sifted flour, knead the dough thoroughly.

Cover and let the dough rise in a warm place for 1-1.5 hours. After punching down, let it rise again for about 1.5 hours.

While the dough is rising, prepare the filling. Thinly shred the fresh cabbage.

Peel the carrots and slice them thinly into strips with a sharp knife.

Peel the onion and chop it into small cubes.

Heat the butter in a frying pan. Add the onion and sauté, stirring, over medium heat until translucent (3-5 minutes).

Add the carrots, stir, and fry for another 5 minutes.

Place the cabbage, mix well. Cover with a lid and simmer for 15 minutes.

Place the eggs in water, bring to a boil, and cook for 8 minutes. Cool and peel. Finely chop the hard-boiled eggs.

Preheat the oven. Divide the dough into two parts, one of which should be slightly larger. You can set aside a little dough for decorating the pie.

Roll out two flatbreads to a thickness of approximately 0.7 cm.

Roll out the remaining dough thinly (1.5-2 mm), cut into narrow strips, make cuts to form "ears of wheat."

Beat the yolk, add 0.5 tablespoons of water. Mix.

Place the smaller flatbread onto a baking sheet, then use a spoon to spread the prepared filling evenly over its entire surface, leaving a 2–3 cm border around the edges.

Cover the pie with the second flatbread, pinch the edges. Decorate the pie. Brush the surface of the cabbage pie with beaten egg (or a mixture of yolk and water), and make a small hole on top for steam to escape.

Place the cabbage pie in a preheated oven at 180 degrees for about 35–45 minutes (until golden brown). To prevent the baked pie from losing moisture while cooling, wrap it while hot in a large kitchen towel. For an even softer crust, you can additionally place the hot pie into a plastic bag.
