
Cabbage Cookies
Description
Homemade baked goods for tea. From cabbage they make pies, pastries, casseroles. Have you ever made cookies? Try making such an interesting baked good. Here a shortcrust dough is prepared with the addition of stewed cabbage and onion. If you decide to make such cookies during Lent, you can freely replace butter with vegetable oil and get a Lenten cookie – it will also be tasty. This amount of dough yields 18–20 pieces. You can make cookies from half the dough and send the rest to the freezer—it keeps well for about three months. They can be served with first courses, with tea. The baking is ready. Serve at the table.

First of all, you need to prepare the cabbage. Finely chop the onion and place it in a pan with vegetable oil. Fry over medium heat until translucent.

Shred the cabbage, add it to the onion, season with salt and pepper, pour in 100 ml of water, stir, and simmer covered for 30 minutes.

Remove the lid, and if any liquid remains, increase the heat and cook until the liquid evaporates. Cool completely.

Mix the flour with the leavening agent, add softened butter, and rub it with your hands into coarse crumbs.

Add sour cream.

Crack the egg and stir with a spoon.

Add the cooled cabbage to the dough and knead it. The dough will be slightly sticky to the hands. Wrap it in plastic wrap and place it in the refrigerator for 20 minutes.

Take the dough out of the refrigerator, divide it into 17–20 balls. Line the baking sheet with parchment paper, place the dough balls on the sheet, press them with the palm, shaping them into flat discs about 1 cm thick.

Preheat the oven to 180 degrees and bake the cookies for 30 minutes.
