
Cabbage in a Cabbage Cloak

Prepare all the ingredients.

Thinly shred the white cabbage. Add salt. Mix and gently squeeze with your hands so the cabbage settles and releases its juice.

Peel the carrots and beets and grate them. I use a Korean-style carrot grater. Cut the cucumber and bell pepper into matchsticks. Finely chop the parsley and press the garlic through a garlic press.

Mix everything.

Then prepare the Napa cabbage. Separate it into individual leaves and blanch in boiling water for 5 minutes until softened. Drain the water and let the cabbage leaves cool.

Place a little vegetable filling on a napa cabbage leaf. Roll it into a roll and tuck in the edges, as you would for stuffed cabbage rolls.

Repeat with the remaining sheets until the filling is used up.

Pack a clean jar tightly with vegetable rolls.
