Cast-iron cookware is the best choice for preparing delicious dishes in the oven. Cabbage cooked in a cast-iron pot is different from what you'd get using modern pots.     If your sauerkraut has little carrot - then peel the carrot and grate it on a coarse grater.

    It's better to use meat with some fat—it will be tastier. Cut the meat into pieces.

    If you have a Dutch oven with a flat bottom, sear the meat in it; if it's a traditional oven-safe one meant for the stove, sear the meat in a frying pan. Pour a couple of tablespoons of vegetable oil into the Dutch oven and heat it on the stove over high heat. Sear the meat until it develops a nice golden-brown crust.

    You can add onion and carrot to the fried meat, or you can save time by frying them in a pan simultaneously with the meat.

    Rinse the sauerkraut lightly and add it to the cast-iron pot with the fried meat. Add the fried onion and carrot, salt, and ground pepper. Pour in about a glass of hot water.
