
Cabbage stewed with mushrooms in tomato sauce
Description
The dish is prepared without unnecessary complications. Cabbage is a very versatile and healthy vegetable, but eating it raw can be difficult (or unappetizing) for many. Braised cabbage with mushrooms is an excellent way to not only diversify your everyday meals, but also to enjoy a nutritious, light, yet satisfying dish. It takes no more than one hour to prepare. This cabbage can be served as a side dish to any main course. Moreover, try making fried eggs for breakfast and serve them together with the braised cabbage. The dish is now ready to be served.

1. First, chop the cabbage and fry it in a pan with heated vegetable oil.

2. Set to medium heat, fry and constantly stir. Cook until the cabbage becomes soft and golden in spots. It tastes better when the cabbage is well browned.

3. Add tomato paste, mix and fry for a couple more minutes. Then transfer the cabbage to the pot in which you will simmer it.

4. Then sauté the onion and carrots in vegetable oil and add them to the cabbage. Now prepare the mushrooms.

5. I chose button mushrooms, but you can use oyster mushrooms instead—they cook quickly too. I peel the button mushrooms and then slice them lengthwise into slabs. If you prefer a finer chop, feel free. The cutting method doesn't affect the taste of the finished dish.

6. Fry mushrooms in vegetable oil for no more than 7 minutes. Don't forget to stir them constantly. Cook the mushrooms until golden brown.

7. When you add the mushrooms to the cabbage, chop the herbs (I used green onions and parsley) and add them to the pot as well. Then mix everything, add a little water, and let it simmer over low heat for about 20 minutes.

8. When the water has evaporated (add more if necessary) and the cabbage becomes tender, it's ready. Turn off the heat and serve it at the table as a main dish or a side dish.
