    Rinse the head of cabbage under cold water. If there are any rotten spots, be sure to cut them out with a knife. Pat the cabbage dry with paper towels—it should not be wet. Finely shred it and transfer to a bowl. Wash the carrots in cold water, peel them, and grate on a fine grater. Add everything to the bowl with the cabbage.

    Prepare the brine. Mix the honey, salt, and water. Put it on the stove and bring to a boil. While it heats, stir the brine thoroughly so the honey and salt dissolve in the water. While the brine is coming to a boil, mix the cabbage with the carrot. Once everything is well mixed, press down on the vegetables so they release their juice. You can press them down with a plate placed on top of the cabbage, or with a one-liter jar.

    Now scald the jar. Pack the vegetables tightly into it. When the brine comes to a boil, pour it into the jar. The jar should be completely filled with brine and the vegetable mixture. Cover the neck with a plastic lid with a small hole in the center. The hole is needed so steam can escape.

    Leave the jar in a cool place for 24 hours. The next day, pierce the cabbage—this will help remove excess bitterness—and taste it. If it’s ready, seal the jar with a lid and put it in the refrigerator. If not, leave it for another 24 hours and repeat the same procedure.
