
Classic Cabbage Recipe
Description
This appetizer is quick and easy to make. The cabbage is quite simple to prepare. The essential vegetables here are cabbage and bell pepper; carrots can be added if you like. I really enjoy it combined with cabbage and bell pepper. “Provencal” cabbage tastes great both 3 hours after preparation and several days later. The appetizer is ready. Serve right away.

Prepare all the necessary ingredients. Rinse the vegetables, remove the stems and seeds from the peppers, and peel the carrots.

Finely shred the cabbage with a knife or using a special shredding grater.

Transfer the cabbage to a large bowl so it’s easy to mix. Add the salt and sugar and mix well, pressing firmly with your hands until the cabbage starts to release its juice.

Cut the sweet pepper into thin matchsticks and add it to the cabbage.

Grate the carrots on a coarse grater or using a Korean-style carrot grater and add them to the other vegetables.

Add finely chopped garlic, vinegar, and vegetable oil.

Mix everything well.

Now you need to place the salad under a press. To do this, tamp it down well again, cover the top with a plate of suitable size, and place a weight on top—a jar of water or a pitcher will work. Leave the cabbage for at least 2 hours, preferably 5–6.
