Prepare all necessary ingredients. Wash the vegetables.

Prepare the brine. Boil water and dissolve the salt in it. Cool the prepared brine.

Cut the cabbage into wedges, core attached.

Peel the beet and slice it into thin rounds.

Peel the garlic and slice into thin slices. Peel the pepper and slice into rings.

In a large container, place: cabbage, celery, garlic, pepper, and celery stalks.

Layer the vegetables, finishing with the beets.

Pour cold brine over the vegetables. Then cover with a lid and leave for 3 days at room temperature. If you think the brine is not salty enough, add more salt.
