Georgian-Style Cabbage

Description

Depending on how the cabbage is cut, adjust the amount of marinade. On average, you will need 1 liter of marinade per 1 kilogram. I highly recommend using allspice and bay leaves in this simple Georgian-style cabbage recipe, as they give it a special aroma. You can adjust the spiciness to taste; however, the cabbage should be pleasantly spicy.

Instructions

  1. 1

    Step 1

    Step 1

    1. This is the set of ingredients you need to make Georgian-style cabbage.

  2. 2

    Step 2

    Step 2

    2. Remove the outer leaves from the cabbage, but do not throw them away — we will still need them. Cut into fairly large pieces.

  3. 3

    Step 3

    Step 3

    3. Peel the beets and slice them thin. You can also grate the beets, but not everyone likes that option.

  4. 4

    Step 4

    Step 4

    4. Peel the garlic and (if desired) mince it. The amount depends on your taste preferences.

  5. 5

    Step 5

    Step 5

    5. Prepare a pot of the appropriate size. Place a third (or half, depending on the amount) of the cabbage on the bottom.

  6. 6

    Step 6

    Step 6

    6. On top, arrange a third of the remaining ingredients—garlic, herbs, pepper, and beet.

  7. 7

    Step 7

    Step 7

    7. Layer the cabbage until you run out of ingredients. You can also use finely chopped carrots.

  8. 8

    Step 8

    Step 8

    8. Now you can prepare the marinade. For a pot of this size, you will need triple the amount of ingredients listed in the recipe (for 3 liters of water). Add sugar and salt to the water, along with bay leaf, pepper, and vinegar.

  9. 9

    Step 9

    Step 9

    9. Bring to a boil and let the sugar and salt dissolve completely. Pour the boiling marinade over the cabbage.

  10. 10

    Step 10

    Step 10

    10. Remember the leaves you set aside? Place them on top in the pot so the homemade Georgian-style cabbage doesn’t dry out.

  11. 11

    Step 11

    Step 11

    11. All that remains is to place a small weight on top and, once cooled, refrigerate the pot for at least 24 hours.
