
Winter Cabbage in Jars
Description
A canning recipe without unnecessary complications. To prepare cabbage in jars for winter, you will need a minimal set of spices: salt, sugar, and peppercorns for aroma. Choose firm white-head cabbage of autumn varieties. Such cabbage will keep in your jars all winter and will not darken. The preserve is ready for winter storage.

Prepare the ingredients.

Remove a couple of the top leaves from the cabbage and shred the vegetable into thin strips. You can use either a sharp knife or a cabbage grater.

Mix the cabbage and carrots in a bowl.

Add the salt, sugar, and peppercorns, mix well, and rub with your hands until the juices are released.

Pack the cabbage into a jar, pressing it down firmly. Leave it on the counter for 2–3 days with the lid loosely on. The cabbage will become juicy and start to ferment.

Move the cabbage to the refrigerator or cellar, where it will be stored all winter.
