
Cabbage in Pieces for Winter

Perfect for winter stocking. Here is a classic recipe for winter cabbage in pieces, with only the minimum necessary ingredients. If you like, you can use much more spice to make the cabbage flavor richer. When thoroughly marinated, it turns out very tasty and pleasantly spicy. Jars keep for up to a year in a cool place.

1. Take a medium-sized cabbage and remove the outer leaves. With a sharp knife, cut it in half and remove the core.

2. At the same time, sterilize the jars and lids. Cut each half into medium-sized pieces. There is no need to mince them, but cut them so the pieces can easily fit into the jar.

3. This recipe for winter cabbage preserved in pieces calls for garlic, about 3–4 cloves per jar. Peel the cloves and chop them lightly.

4. Fill each sterilized jar with cabbage pieces, packing them fairly tightly. Bring clean water to a boil on the stove.

5. Place the garlic in the jars, pour boiling water over it, and let stand for about 10 minutes with the lids on. Meanwhile, you can prepare the marinade itself. To do this, combine the water, salt, and sugar and put it on the heat.

6. Carefully drain off the hot water, then add peppercorns, dill, bay leaf, and vinegar to the jar. Bring the marinade to a boil and let the sugar and salt dissolve completely.
