Marinated Cabbage with Apples

Description

A simple preservation recipe without unnecessary fuss. 1. For crunchy homemade cabbage pickled with apples, choose a firm, dense head. Remove the outer leaves and shred it fairly fine. 2. Peel the carrots and grate them on a medium grater. Add them to a deep bowl (pot or basin) with the cabbage. Use as much as you like. 3. Garlic adds extra punch. Grate peeled cloves or press them through a garlic press. 4. Wash green apples—sour ones are best—peel them, and cut into medium cubes. 5. Mix everything well. Transfer to a container that’s easy to store. 6. For the brine, combine water, sugar, salt, and vegetable oil in a separate pot. Bring to a boil and add the vinegar. 7. Boil for a couple of minutes, then pour the hot brine over the cabbage. 8. Cover and let cool completely. This is a very simple cabbage-with-apples pickle, so it’s ready to serve after just one day. Crisp and tangy, everyone will like it. Store in a cool, dark place.
