
Cabbage, quick-pickled in a jar
Description
This simple recipe for cabbage quick-pickled in a jar is sure to please you! It's delicious on its own, but my favorite way to serve it is with shredded onion and a dressing of unrefined oil. A very tasty and very healthy salad.

1. Grate the cabbage and carrots, or shred them finely by hand. Sprinkle with dill seeds and salt, then massage with your hands. Leave for two hours so the cabbage releases its juice. Then squeeze the cabbage and pack it into clean jars. Add the bay leaf and pepper here as well.

2. Pour the remaining cabbage juice into a pot and place it over heat. If there is too little juice, simply add water. Bring to a boil, skim off the foam, and turn off the heat. Add sugar, salt, and vinegar, stir well, and pour the resulting marinade over the jars of cabbage.

3. Sterilize small jars for 20 minutes, and those 1 liter or larger for 30 minutes. Seal with lids for winter storage.

4. In winter, open the jar, top it up with oil and a little green onion, — and the salad is ready!
