
Kale with Raisins and Nuts
Description
Perfect with a meal and with drinks. You can replace pine nuts with walnuts or almonds. If desired, add a poached egg, couscous, or Feta cheese to the dish. Serve with herbs and sauce.

Step 1

1. Place the raisins in a small bowl, cover with hot water, and let stand for 20 minutes until the raisins soften. Drain the water.

2. Fill the sink with cold water. Trim the stems from the kale. Place the kale in the sink and thoroughly wash the leaves. Drain in a colander or strainer. In a large pot, bring salted water to a boil over high heat. Add the kale and cook until tender, about 5 minutes.

3. Drain the cabbage in a colander and immediately rinse under cold water. Drain the water and squeeze to remove excess liquid. Coarsely chop the kale.

4. Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the kale, pine nuts, and raisins; season with salt. Drizzle with balsamic vinegar on top and cook, stirring, until all the ingredients are well combined.
