1. The recipe for crispy winter cabbage should begin with the brine. To do this, pour salt into a pot, add about 2 liters of water, and bring to a boil.

2. Meanwhile, shred the cabbage. It goes faster with a dedicated cabbage shredder, but a knife works too.

3. Place the cabbage in a large container and pour the cooled brine over it. Let stand for 10–15 minutes.

4. Meanwhile, wash, peel, and shred the carrots (you can grate them on a coarse grater). Carefully drain the brine from the cabbage and add the carrots to it. You can add your favorite spices.

5. Pack the cabbage into the jar, pressing it down firmly. It's better not to fill the jar to the top so the brine doesn't overflow.

6. Now let the cabbage stand for 2 days. From time to time, make small indentations in it so the gas that forms can escape. After 2 days, drain the brine off the cabbage, add sugar to it, and pour it back into the jar. After another day, the crunchy homemade winter cabbage will be ready to eat (for a trial taste, so to speak). You can then divide it among jars, seal tightly with lids, and store it in a cool place.
