
Hot-Marinated Cabbage
Description
Winter preserve made at home. I can’t help but share this wonderful recipe for preparing cabbage in hot brine. Everything is done quite simply and quickly, and it turns out very tasty. The preserve is ready for winter storage.

1. Wash the cabbage thoroughly and cut it however you prefer. Then put it in a saucepan.

2. Wash and peel the carrots. Shred or grate them and add them to the pot with the cabbage. Also add a bay leaf and 10–12 allspice berries.

3. Next, prepare the brine: pour 1.5 liters of water into a separate saucepan and stir in the vegetable oil and vinegar. Add the salt and sugar. Bring the brine to a boil.

4. Pour the resulting brine into the pot with the cabbage and carrots. The brine should be hot but not boiling. Cover the pot with a lid and set it aside in a quiet spot for 2–3 days.

5. When the time is up, divide the cabbage among the jars and refrigerate. That’s how easy it is to make hot-pour cabbage!
