
Salted Caramel Cupcakes

Pour 150 grams of sugar into a saucepan and place it over low heat; do not stir.

Pour in the warm cream here as well, add the vanilla sugar, and stir well until smooth. Add salt to taste, then put it back on the heat.

Simmer the caramel over low heat; if you have a thermometer, the caramel temperature should reach 102–104 degrees. If you do not have a special thermometer, use 5–6 minutes as a guide. Remove from the heat and let cool.

Place 70 grams of butter into a mixing bowl, add 90 grams of sugar, and beat at low speed.

Add 2 eggs one at a time and add 2 yolks. Separate the 2 whites immediately into a saucepan; you will return to them later. Whisk everything.

Add the flour and baking powder, then start beating the batter at low speed.

Pour the milk into the batter and whisk once more.

Add 4–5 tablespoons of salted caramel, cooled to room temperature, to the batter and whisk.

Bake the cupcakes at 180 degrees for about 30 minutes; check doneness with a wooden skewer.

Using an apple corer, make an indentation, stopping just short of the bottom of the cupcake.
