
Cupcakes with cookies
Description
The cupcakes turn out tender and pleasantly moist. Adding chopped cookies gives a subtle crunch. You can chop the cookies with a knife or grind them in a blender. Crushed Oreo cookie crumbs are also sold in small packets. The frosting can be replaced with meringue or buttercream. Serve warm or chilled. Perfect with tea.

Prepare all the ingredients you need for Oreo cupcakes. Take the egg out ahead of time so it is at room temperature.

Crack the egg into a deep bowl, add salt, sugar, and vanilla sugar, and beat until light and fluffy.

Pour the vegetable oil into the egg mixture and beat on low speed until smooth and even.

Mix the flour with the cocoa and baking powder, sift into a bowl. Gently mix until the batter is smooth and even.

Coarsely chop “Oreo” cookies into large crumbs, add them to the dough, and mix.

Place paper liners in a pan with round cavities and fill the batter to two-thirds of the height.

Place the tin in a preheated oven and bake at 180 degrees for 20–25 minutes. Remove the baked cupcakes and cool them completely.

In a bowl, add the cream cheese and confectioners’ sugar, pour in the cream, and whip until light and fluffy.

Cut a hole in the center of each finished cupcake, stopping short of the bottom. Transfer the frosting to a piping bag fitted with an open star tip. Fill the hollow in the cupcake with frosting and pipe a swirl on top. Decorate the cupcakes with Oreo cookies as you like and serve.
