
Cupcakes with orange curd
Description

Prepare the ingredients listed. Ahead of time, prepare any cream for decorating the dessert—plombir, custard, buttercream, etc.—using the recipes on our website.

Melt the butter for the dough in the microwave or in a double boiler.

Pour milk of any fat content into a deep bowl and crack in the chicken eggs. Add salt and granulated sugar. Be sure to add salt! Whisk everything with a whisk.

Pour the melted butter into a bowl. Add the flour and baking powder, vanilla sugar. Carefully fold the dry ingredients into the wet ingredients, trying not to form lumps. Preheat the oven to 180 degrees.

Place the batter into silicone or metal cupcake moulds, filling each mould slightly more than halfway, but no more, as the bake will rise in size. Put the moulds in the oven.

Bake the cupcakes for about 15–20 minutes until golden brown. Remove from the oven and let them cool.

Meanwhile, prepare the orange curd. Cut one of the oranges in half and squeeze the juice from one half and from the second orange. Leave half of the fruit for decoration.

Pour the orange juice into a cauldron or a saucepan with a non-stick coating. Add granulated sugar to the same pan.

Beat in a chicken egg. If you are making curd for the first time, you can use only the yolk. If you keep stirring the cream constantly, add the white as well.

Add the flour and whisk the contents of the container thoroughly. Place it on the stove and use medium heat.

Cook the cream until lightly thickened for 10 minutes, then stir in the butter after removing the pan from the heat. Cover directly with plastic wrap (touching the surface) and cool.

Cut out the centres of the cooled cupcakes without cutting through to the bottom. You can do this with a knife or an apple corer. Fill the hollows with cooled orange curd.

Decorate the cupcakes with any stiff buttercream of your choice. Slice the remaining half of the orange and use the slices to garnish the cupcakes before serving.
