Description

Delicious pastries for the whole family. You’ll enjoy the flavor of this dessert so much that you’ll want to make it again and again! Ingredients for the treat are available at any supermarket. The main thing is to spread the cream on cooled pastries so it doesn’t “run”. Can be served with tea or coffee.

    Prepare the listed ingredients. Lime may be replaced with lime juice; butter may be replaced with good-quality margarine.

    Beat the chicken eggs with a pinch of salt and sugar until light and foamy, about 3–4 minutes, using a food processor or mixer.

    Scald the lime with boiling water and grate the zest of one lime into the egg mixture.

    Melt the butter in the microwave and pour it into the bowl with the egg mixture. Add the wheat flour and baking powder. Preheat the oven to 180 degrees. Gently fold in the dry ingredients, trying not to knock the air bubbles out of the batter.

    Put the batter into cupcake moulds, filling them halfway at most.

    Place the molds in the oven and bake the cupcakes for about 15 minutes. Then combine hot water, a sprig of mint, and sugar in a cauldron or saucepan, and simmer a syrup. Soak the cupcakes with it. Leave to cool.

    In a deep bowl, combine thick heavy cream, lime juice, cream thickener, and sugar. Whisk thoroughly until it reaches a thick, creamy consistency.

    Put the cream in a piping bag or piping syringe and pipe it onto the cooled cupcakes. Remember: the baked goods must be fully cooled first!
