
Kao Nii Mu Yang
Description
Here is a recipe for making Khao Niew Moo Yang—a simple yet very distinctive Thai dish. Ideally, the meat is marinated for about two days, left unrefrigerated. In a hot climate, during this time it becomes slightly dried, and the marinade has time to "ferment," giving the finished dish a special aroma. I didn't dare to take such a risk, so I marinated it for only five hours, but kept the container near a radiator. It turned out delicious.

1. Chop the onion and garlic, squeeze the juice from the lemons and also grate the zest. Put all of this into a deep bowl and add the remaining ingredients. Cut the meat into pieces, thread onto skewers, and let marinate in this mixture for 5 hours.

2. Now remove from the marinade and place on a grill rack or barbecue stand. If you don't have either, you can simply bake in the oven. Remember to turn occasionally and baste with the remaining marinade.
