
Candied kumquats
Description

1. First of all, wash the kumquats.

2. Make small cuts with a sharp knife. About 5-7 cuts, depending on the size of the fruit.

3. Place the kumquats in a saucepan, pour boiling water over them, and put on the heat. Simmer for about 3 minutes, then pour cold water over them and let stand for about 5 minutes to cool completely.

4. Slightly open the cut (using a wooden skewer, for example) and carefully remove the pits.

5. Bring 1.5 cups of water to a boil and add sugar. Once the sugar has dissolved, add the kumquats and minced ginger to the pot.

6. Reduce the heat to the minimum and leave the fruit until the syrup has reduced.
