
Canapés with Red Fish
Description
Perfect for the table and with drinks. Individual canapés are the best option for a buffet. They are made very quickly—literally in 10–15 minutes if you have all the ingredients on hand. For the dish, you can use any type of red fish: salmon, Atlantic salmon, chum salmon, etc., boneless and salt-cured. Serve with herbs and sauce.

Prepare the listed ingredients.

Place the cream cheese in a deep bowl and add a pinch of salt to the same bowl. You do not need to add more salt, as the fish is already salty. Rinse the dill and chop it finely, add it to the bowl with the cheese, and mix.

From black bread, use a plunger cutter to cut out the canapé bases. If you don’t have one, simply cut the bread slices into squares or small rectangles. Place on a plate.

Spread cream cheese on each piece, heaping it generously.

Wash the cucumber to remove spines and dust, trim off the ends, and cut it in half vertically. Slice into half-rings and arrange the cucumber slices on the cheese.

Cut the red fish into small pieces and place on the cream cheese. If you like, roll the fish slices into rosettes or skewer them with toothpicks so they stay on the canapé better.

Garnish the dish with curly parsley or sprigs of dill and serve. You can make the canapés up to half an hour ahead and keep them in the refrigerator. The main thing is that the cheese should not be too moist.
