
Canapés with sprats
Description
This recipe for sprat canapés came about on its own—we were throwing an eighties-themed party with friends, so we made appetizers to match. Everyone immediately thought of those simple open-faced sandwiches that no feast was complete without! It turned out so beautifully that I can't wait to share this simple recipe with you too. Can be served warm or chilled.

1. Cut the kilka into pieces, remove the head and backbone from each fish.

2. Toast the bread in a frying pan until crispy. Cut circles or squares from it and brush with oil.

3. Boil the eggs and let them cool. Slice the cucumber into rounds, one for each canapé you're making (preferably a bit thicker than mine here, of course).

4. Now on each piece of buttered bread, add a round slice of egg and cucumber, and arrange sprats nicely on top. Done!
