In the canapé, the banana serves as an interlayer in the form of purée, so you can use the fruit that was stored next to apples but remained white and juicy inside. Peel the banana, mash its flesh in a mortar, and immediately pour lemon juice over it; otherwise, the purée will darken from contact with air. Incidentally, lemon juice also balances the sweetness of bananas.

Cut the baguette into slices and spread them with banana purée. Salt.
