
Pancake Canapés on Skewers

1. First, make thin crepes. I am not giving a recipe, as every cook has her own way of making them. Try to make them not too sweet, but very thin. Let cool.

2. Spread the first pancake with cream cheese. If desired, you can add spices or herbs to the cheese itself.

3. Cover with the next pancake and place very thin slices of salmon on top. Cover with the next pancake, spread with cheese, and continue in this way until the ingredients run out.

4. The pancake should be the last layer in the stack. Gently flatten our "pyramid," and using canapé cutters, cut out small rectangles; pierce them with a toothpick so they hold together. Garnish the top with an olive.
