Instructions
- 1
Step 1

Prepare the ingredients.
- 2
Step 2

In a mixing bowl, combine the flour, salt, and sugar. Make a well in the flour, pour 140 ml of warm milk into it, crumble the yeast into the milk, and let stand for 15 minutes.
- 3
Step 3

Add 1 egg and 35 grams of melted butter.
- 4
Step 4

Knead the dough; knead by hand for at least 7 minutes, until the dough no longer sticks to your hands, but it is better to do this using a mixer. Cover with plastic wrap or a cloth, place in a warm spot to rise for 1.5 hours.
- 5
Step 5

While the dough rises, pour boiling water over the dried apricots and raisins and leave for 5–10 minutes; rinse, drain the water, pat dry, then chop the dried apricots and walnut kernels. During proofing, the dough should rise to about double its size.
- 6
Step 6

Divide the dough into 3 parts and roll each part into a ball.
- 7
Step 7

Roll out the first sheet of dough, brush it with melted butter, and sprinkle with brown sugar and chopped walnuts.
- 8
Step 8

Place the second layer on the first layer of dough, brush it with melted butter, and sprinkle with brown sugar and raisins.
- 9
Step 9

Roll out and lay the third sheet of dough, brushed with oil and sprinkled with sugar and chopped dried apricots.
- 10
Step 10

Roll up the roll from all three layers of dough, pinch the edge closed, and roll it gently on the work surface to lengthen and shape the roll.
- 11
Step 11

Cut the dough roll into pieces about 3 cm thick and arrange them on a baking sheet. Brush with a mixture of egg yolk and 2 tablespoons of milk. Let rise for 15–20 minutes. Meanwhile, preheat the oven to 180 degrees.
- 12
Step 12

Bake the buns at 180 degrees for 20–25 minutes. Let the finished buns cool to room temperature before applying the chocolate glaze.
- 13
Step 13

Melt the white chocolate in a double boiler or in the microwave. You can add a little butter to it (about 20 grams).
- 14
Step 14

Apply the chocolate glaze to the buns and let it set slightly.
