
Squid in Oil
Description
The recipe won't take much time. This appetizer pairs well with lemon or any sauces based on mayonnaise or Greek yogurt with herbs and garlic. The "special feature" of this particular recipe is that wine is added to the batter. This way the dish acquires a wonderful aroma. Serve the appetizer at the table.

Step 1

Wash the squid bodies, clean them, and cut into rings. Do not make the rings thicker than 7–8 millimeters. Otherwise they will not cook through and will be tough. Pour boiling water over the rings for 3–4 minutes.

Now prepare the batter. To do this, beat the egg well with a fork or whisk. Add wine, flour, and salt and pepper to taste to the egg. Beat everything thoroughly.

To get the batter to the right consistency—that is, fairly thick—you can add more flour. Carefully dip each ring in the batter, then place them in the pan. It's easiest to do this with a fork. Before frying, heat the pan well and pour in enough vegetable oil so the rings are fully submerged. Fry the calamari until appetizingly golden brown.

Since quite a lot of oil is used for frying, you need to remove the excess from the rings. To do this, place them on a plate lined with a paper towel so it absorbs the oil. The squid can be served either while still warm or after they have cooled.
