
Squid with rice

Step 1

1. First, wash the tomatoes and make small cuts with a sharp knife. Pour boiling water over them and leave for just a minute. Then drain the water, cool the tomatoes, and peel off the skin.

2. Meanwhile, peel 1 onion (I recommend using purple onion for the filling) and half of the garlic. Finely chop and add to a frying pan with melted butter. Sauté until soft, then remove from heat. Add rice to salted water and cook until half-done.

3. Cut the peeled tomatoes into small cubes. Place some of them into a deep bowl with the fried onion and garlic.

4. In a separate skillet, sauté the second onion, diced, for a couple of minutes. Add the remaining tomatoes and simmer for 3-5 minutes. Add minced garlic to the sauce, a pinch of salt, sugar, and pepper to taste.

5. Let the cooked rice cool slightly and transfer it to a bowl. Mix everything gently. Add spices, herbs, or peas to taste.

6. Clean the squid bodies.

7. Fill the carcasses with the prepared stuffing. Secure with a wooden skewer.

8. Place the squid in the sauce and simmer over medium heat for about 20 minutes. Before serving, carefully slice the squid bodies, sprinkle with herbs, and, if desired, with grated cheese.
