
Peking-Style Squid
Description
The appetizer is quick and easy to make. Beijing-style squid is a delicacy served in many Beijing restaurants. Preparation: Place the squid in a bowl, cover with cold water, and soak for 1 hour. Rinse the squid and remove the outer membrane. Place the squid on a cutting board and cut into 2×4 cm pieces. Bring water to a boil in a pot. Add the squid to the pot. When the squid pieces curl up, remove them from the boiling water. Mix chopped onion, ginger, garlic, cucumber, salt, cognac, and starch dissolved in broth. Heat vegetable oil in a skillet, add the squid, and stir-fry. Transfer to a plate. Add the ginger mixture to the skillet and bring to a boil. Add the squid pieces, stir so they are evenly coated with the sauce, and remove immediately. Serve the squid with the sauce. The appetizer is ready. Serve immediately.
