With a large chef's knife, slice the squid (mine were already cleaned) into rings.

Next, slice the green onion into rings.

Peel the ginger and slice it thinly into rings.

Finely chop the garlic.

Wash and cut the pea pods diagonally. Do not chop too finely—each pod into 2-3 pieces.

Preliminary preparations are complete. The dish itself cooks quickly, in less than 10 minutes. So, heat vegetable oil in a wok. As soon as the oil is hot, add garlic and ginger. Sauté until their characteristic aroma appears. Do not brown them—otherwise you'll destroy all the aromas and flavors.

When the garlic and ginger release their aroma, add the squid to the wok. Stir-fry over high heat, constantly stirring.

After 2 minutes, add the peas. Continue frying, stirring constantly.

Now quickly add all the remaining ingredients to the wok, constantly stirring. Green onions, beans, rice wine, soy sauce, and cornstarch—everything goes in here.
