
Squid stuffed with rice and mushrooms

Prepare all the ingredients. Cook the rice in advance in salted water until done.

Dice the onion and grate the carrot. Sauté the vegetables until cooked, then transfer them to a deep plate.

In the same skillet, sauté the sliced mushrooms. Add to the vegetables.

Add cooked rice, grated cheese (reserve a little for the top), and any chopped fresh herbs.

Pour boiling water over the squid bodies, then immediately cool with ice water.
