Let's start by preparing the filling. We need to finely chop the mushrooms, herbs, and half of an onion. Now mix the chicken mince, mushrooms, onion, and herbs in a bowl. Add a handful of breadcrumbs, fennel, ground black pepper, and salt to taste. Mix everything thoroughly.

Now we need to clean and rinse the squid bodies, dry them thoroughly, and stuff them with the prepared filling, securing the opening with a toothpick. Keep in mind that squid shrink during cooking, so they should be stuffed loosely, leaving some extra space.

Next, we take a heavy-bottomed pot and pour in some vegetable oil, placing the pot over heat. Into the heated oil, we add the sliced half of an onion and fry until it becomes translucent. Then we add minced garlic and a bay leaf, frying for another half a minute. After that, we pour wine into the pot and wait until it almost completely evaporates. Now we add tomato paste and broth, season with salt and red pepper flakes to taste. Once the sauce comes to a boil, we add the squid.

Turn the heat to the lowest setting, cover the pot with a lid, and cook for 45–60 minutes. During this time, turn the squid over a couple of times and baste them with the sauce. Once the squid become tender, turn off the heat, sprinkle everything with fresh marjoram, and let the dish steep for another 7–10 minutes.
