
Squid in Batter

Perfect for the table and with drinks. This hot appetizer is ideal for anyone who loves something crispy. It pairs wonderfully with beer, especially when served with garlic sauce. It can be served warm or chilled.

The squid must be thoroughly rinsed and cut into small rings. In a separate bowl, mix the garlic, lime juice, salt, and pepper. Mix thoroughly and add the squid rings to the marinade. Refrigerate for 30 minutes.

Meanwhile, in a separate container, mix a cup of flour, olive oil, salt, pepper, and beer, stirring everything thoroughly until smooth. The batter should also be chilled, covered with plastic wrap, for 30 minutes.

In a blender, combine the mayonnaise, garlic, and lemon juice and blend everything into a sauce. Season with salt and pepper to taste, add the basil, and mix. Garlic sauce for calamari is ready.

Pour a large amount of vegetable oil into a deep skillet or pot and heat it to 180–200 degrees. Dip the calamari rings in batter, then fry until golden. Serve with garlic sauce.
