
Squid in the Oven
Description
To at least somewhat reduce the "damage" from such a not-very-useful meal, I cook calamari rings not in a deep fryer, as is usually done, but in the oven. And today I'll share exactly such a recipe. Serve with greens and sauce.

Preheat the oven to 200°C. Take a baking sheet (or two right away) and line it with parchment paper. If your squid is frozen, thaw it, clean it, and cut it into rings. I bought pre-sliced squid rings.

In a small bowl, beat 2 eggs. Set this bowl aside for now. Pour flour and breadcrumbs into two separate small bowls. Add a mixture of Italian dried herbs to the breadcrumbs and mix. Now, for each calamari ring, first coat it in flour (tapping against the edge of the bowl so the excess falls off), then dip it in the egg (also tapping), and finally in the breadcrumbs. Place on a baking sheet.

Bake for 15–20 minutes, until a beautiful golden crust forms. Then flip to the other side and bake for another 10 minutes. Serve warm with your favorite tomato sauce and a drizzle of lemon juice (optional).
