
Squid, Fried in Batter
Description
Suitable for both holidays and everyday meals. The main rule of this recipe is not to overcook the squid in the first stage. Drop the bodies into boiling water for no more than three minutes. Then the squid meat inside the batter will be truly tender and not rubbery. You can replace the water with beer; however, I decided to make it with plain water this time. Serve the appetizer at the table.

Rinse the cleaned squid tubes in cool water. Pour water into a saucepan and set it on the heat. Bring to a boil. Add salt and our precious squid to the boiling water for three minutes. Slice the boiled and cooled tubes into rings.

In a bowl, mix the water and flour. Add the salt and oil, and mix the batter. Separately, beat the egg whites until light and foamy. Add them to the batter. Dip the calamari rings in the batter.

For frying, I chose a kazan. Pour plenty of oil into it and set it over the heat. Fry the rings on both sides for three minutes each in the hot oil.
