Description

The recipe won't take much time. An amazing version of Karelian pastry, which can be filled not only with mashed potatoes but also with grains (mainly wheat and barley). Many legends and beliefs surround this dish, and kalitki take no more than an hour to prepare. Thanks to a mixture of two types of flour and additional ingredients that make up the classic recipe for kalitki with potatoes, they turn out incredibly delicious. The pastry is ready. Serve at the table.

    1. Kalitki are made in various sizes, but almost always in the same shape. They can have 4, 5, or even 7 sides. First, mix the baking powder, salt, flour, and warm milk.

    2. I used two types of flour. If you don't have rye flour, you can use crusts from rye bread, soaked for 15 minutes in warm water. After softening, squeeze out the excess water and add the resulting mass to the main wheat flour. Knead the dough for about 15 minutes until it's no longer sticky. Then let it rest for about half an hour.

    3. The dough turns out very elastic. When you gain experience making kalitki, you'll be able to feel the dough.

    4. Meanwhile, boil the potatoes in their skins. Note that the mashed potato filling for the calzones is made specifically from this boiled potato.

    5. Do not add water or milk to the puree, only one or two tablespoons of butter.

    6. Now comes the most crucial step... Cut the prepared dough into strips, rolling them well. Then divide each strip into equal balls, and roll out each ball.

    7. I made an oval shape, and the dough thickness was like that for pies. Once the puree has cooled slightly, you can start shaping the kalitki: place a tablespoon of filling onto each dough piece (if desired, you can add an egg to the puree before mixing). Pinch or fold the edges together, leaving the center open.

    8. Grease a baking sheet with vegetable oil and place the calitties on it. I brushed the surface of each calitka with yolk beaten with a few tablespoons of milk. You can also use salted sour cream for brushing - but that's a matter of taste.

    9. Bake the kalitki in the oven for about 20 minutes at 180 degrees. As soon as you take them out of the oven, brush the edges and surface with butter. To this day in Karelia, there is a belief: when guests arrive during the baking of kalitki, they say, "Kaunis käsi tahroja!", meaning "Beautiful hands that spread!", and the hostess should reply: "Go take a spread one!"
