
Calitsunia
Description
Delicious pastry for the whole family. This wonderful sweet cheese pastry comes to us from the island of Crete and is made with Greek mizithra cheese. Serve warm or chilled. Perfect with tea.

Step 1

1. The dough for kalitsounia is traditionally made with soft Greek mizithra cheese, but if you can't find it, try Italian ricotta or French fromage blanc. In a large bowl, mix together sugar, baking powder, and flour. Add the butter, mixing with a spoon or your hands. Add the cheese and eggs, stirring with a spoon until the dough thickens. Add the brandy. Knead the dough (approximately 10 minutes) and let it rest.

2. In a separate container, mix the cottage cheese, cinnamon, sugar, egg yolk, zest, and flour.

3. Roll out the dough with a rolling pin to a thickness of 3 cm. Preheat the oven to 180 degrees.

4. Using a special mold or a glass, cut circles 8-10 cm in diameter from the rolled dough.

5. Place the filling in the center of the dough circles. Fold the edges of the dough.

6. Brush the pastry with egg. Bake at 180 degrees for about 20 minutes. Sprinkle with cinnamon. Let cool. Kalitsunia keeps well in the refrigerator.
