Old-fashioned Moscow Rolls

Description

This baked good is practically universal, as such rolls can be served on any occasion. If you've never tried these rolls before, now is the perfect time to bake them in the coming days. They can be served with tea or coffee.

    Start by preparing the sponge. To do this, dissolve the yeast in 250 milliliters of warm water and add half of the flour. Mix well, cover with a towel or plastic wrap, and leave in a warm place for a couple of hours.

    Add the remaining water, flour, and salt to the ready sponge. Knead the dough. This process is quite lengthy, and at first the dough will seem too liquid. Knead it for at least half an hour! Then place the dough into a pot, cover, and leave overnight.

    After 10-12 hours, you can proceed to the next step. Turn the dough out onto the table and knead thoroughly. Divide into 7 equal parts.

    Let the dough rest for half an hour. Now you can shape the dough into a sausage-like roll, making the ends thin and the middle thicker. Connect and pinch the ends together—this forms the handle! Leave the rolls on the table for another 20 minutes.

    At the thick part of the roll, known as the lip, make a neat cut. Sprinkle it with flour and cover again. Grasping the roll's "handle," gently stretch it and then place it onto a baking sheet lined with parchment paper.

    Preheat the oven to 250 degrees. Place a container with water on the bottom and put the baking sheet with the bagels into the oven.
