
How to prepare herring in 3 hours

Make cuts along the backbone and around the head, and remove the fins. Then remove the skin from the fish. Be sure to start filleting the herring from the tail, along the back cut. Done

1. Prepare the fish: clean out the entrails and remove the bones.

2. After you have patted the herring dry with paper towels, separate the fillet from the backbone. Be sure to remove all the bones.

3. Salt the fish on both sides, cover the dish with plastic wrap, and let it sit for one to one and a half hours. The longer the fish sits, the saltier it will become.

4. While the fish is salting, slice the onion into thin half-rings.

5. Rinse the fish under running water to remove the salt and pat dry with paper towels. Then simply cut it into pieces.

6. In a half-liter jar (or another container), layer onion and pieces of herring. The top layer should be onion. If you like, you can add pepper and bay leaf to taste. Do not pack it down! Pour sunflower oil over everything to the brim.

7. Place the jar in the refrigerator for at least 3 hours, or better overnight. That’s it—ready to eat! Serve the herring with or without onion; garnish with dill if you like.
