
Cacciatore (Italian-style chicken)
Description
You can use chicken fillet or any chicken pieces for cooking. I prefer boneless and skinless chicken, but everyone chooses for themselves. If you're using fillet, slightly reduce the cooking time to keep the meat from becoming dry. This chicken goes well with boiled rice or mashed potatoes.

1. In a saucepan, heat the olive oil, add the chicken thighs, season with salt and pepper.

2. Sear the thighs until golden brown on all sides.

3. Meanwhile, peel a large onion and chop it coarsely.

4. Wash the mushrooms and cut them into medium-sized pieces.

5. Remove the seared meat from the pot, but leave the pot on the heat.

6. Place the onion and whole peeled garlic cloves, season with salt and pepper, add the bay leaf. Sauté the vegetables for a few minutes.

7. Add the mushrooms to the pot with the onions, mix and cook for about 4-5 minutes.

8. Cut the tomatoes into small pieces, add them to the mushrooms, and pour in the red wine.

9. Add the chicken meat to the vegetables in the pot and bring everything to a boil.

10. Cover the pot with a lid, reduce the heat, and simmer for about half an hour. Add salt and pepper to taste if necessary.
