Kabus Kajin
Description
Delicious baked treat for the whole family. This interesting classic recipe for kabuskadjin, I believe, will appeal to our home cooks—after all, all the ingredients are simple, familiar, and readily available in every household. And yet, delighting your loved ones with a completely new dish made from such ordinary ingredients is exciting, isn't it? I think it's worth spending a little extra time in the kitchen just to see the shining eyes of your hungry family members, don't you agree? Especially since the main challenge in making this kabuskadjin recipe is properly sealing the edges so the dough doesn't burst while you're rolling it out with a rolling pin. My first pie turned out a complete mess, as usually happens, but my second pastry came out perfectly! That's why I've listed quite generous amounts of ingredients for the dough—just in case ;) Wishing you culinary success, and I hope you'll enjoy this simple kabuskadjin recipe.
Instructions
- 1
Step 1

1. Mix 1 teaspoon of yeast and 1 teaspoon of flour in a glass, then pour warm water over it until three-quarters full. Wait 15 minutes until the starter rises.
- 2
Step 2

2. Mix the flour, starter, add water, and a little salt. You can also add 3 tablespoons of vegetable oil—it will make the dough less sticky to the sides. Mix until smooth.
- 3
Step 3

3. The quantity of ingredients may vary—mix until it becomes like in the photo, easily detaching from the sides.
- 4
Step 4

4. Cover the dough with a towel and let it rise for an hour.
- 5
Step 5

5. Let's prepare the filling. Wash the cabbage and carrots, peel them, finely chop, and sauté in a pan as usual, adding a little salt and pepper.
- 6
Step 6

6. When the cabbage stops crunching, you can add the cheese. Grate it on a fine grater, or crumble it by hand into small pieces, and gradually mix it into the cabbage.
- 7
Step 7

7. Divide the risen dough into two or three parts, and shape each into a flat round. Place the filling from the pan in the center. You can add a little more salt if desired.
- 8
Step 8

8. Now pinch the edges as you usually do with dumplings.
- 9
Step 9

9. Once the dough is thoroughly sealed with no holes left, flip this ball onto the baking sheet and roll it out with a rolling pin into a fairly thin flatbread.
- 10
Step 10

10. Bake in a preheated oven for 20 minutes. When it starts to rise, take it out and make several holes in the center. Then continue baking until done. Good luck!
