
Kabsa (Kabsa Bil Laham)
Description
The recipe won't take much time. Kabsa is a popular and very tasty Arab dish made with rice, vegetables, and lamb. Serve hot.

In 1 tablespoon of ghee, sauté the onion for a minute, then add the meat and season with salt and pepper. Cook until browned on all sides.

Then, pour water to cover the meat plus an additional 2 cm on top. Cover with a lid and cook for half an hour (do not discard the broth after cooking).

After 30 minutes, in another saucepan, sauté the chopped garlic in the remaining clarified butter for a few seconds.

Next, add the carrots, cook for about a minute, then add the tomato paste and mix well.

Then add the meat, salt, and spices, and mix everything thoroughly.

Now, add 4.5 cups of broth, cover with a lid, and bring to a boil (the amount of broth depends on the type of rice).

When the mixture comes to a boil, add the rice and stir. Then, cover with a lid and cook over very low heat for 15-20 minutes, or until the rice is done.
