
Wild boar in the oven
Description
The dish is prepared without unnecessary complications. Before putting the meat in the oven, marinate it in the refrigerator. Use good quality red wine; it will tenderize the meat, add juiciness, and eliminate any unpleasant odor. Serve the meat whole or sliced into pieces, accompanied by fresh or cooked vegetables. The ready dish can now be served.

Wash the boar and scrape the skin with a sharp knife. Mix ¼ cup of salt and ground black pepper, and rub the mixture onto the leg.

Transfer the leg to a bowl and cover with a lid or plastic wrap, then refrigerate for 36 hours.

Pour wine and olive oil into a saucepan, add all the aromatic spices and herbs, salt, 6 garlic cloves, carrots, and onion. Place the saucepan over heat.

Bring the contents of the pot to a boil and cook for 3 minutes, then cool to room temperature.

Strain the resulting mixture, remove all the vegetables, but return the spices back to the marinade and add vinegar.

Rinse the boar to remove salt and pepper, then pat dry, pour the marinade over it, cover with plastic wrap, and refrigerate for another 36 hours.

After the required time, remove the boar and pat it dry with paper towels. Make shallow cuts and insert garlic cloves into them.

Transfer the boar to a suitably sized baking dish and pour in one-fourth of the marinade.

Preheat the oven to 230 degrees and bake the wild boar for about 2 hours, then remove it from the oven, cover with foil, and let it rest for another 20 minutes.
