
Zucchini for children
Description
The recipe won't take much time. My kids happily eat these zucchini pancakes. The pancakes are golden and crispy on the outside, and incredibly juicy and tender on the inside. Serve these pancakes with sour cream or natural yogurt, fresh herbs, and cheese. With this amount of ingredients, I get a whole plate of pancakes that disappear in no time. They can be served with tea or coffee.

In a food processor, chop the zucchini or grate them on a grater. Lightly salt the mixture and let it sit for 10 minutes.

Then, squeeze the minced zucchini through cheesecloth to remove excess moisture.

Now add flour, salt, pepper, egg, and onion to the zucchini and mix well. Place spoonfuls of the batter onto a heated oiled skillet.

Fry these pancakes until golden brown for 3-5 minutes on the first side and 2-3 minutes on the second side.
