Prepare all the ingredients.

Grate the zucchini on a coarse grater; if the skin is thin, you don't need to peel it. Add a pinch of salt, mix, and let sit for 10 minutes. Then squeeze out the released juice and transfer to a deep bowl.

Heat the skillet and grease it with oil. My skillet is 18 cm in diameter. Add 2–3 tbsp of batter and spread it in a thin layer over the entire surface. Cook over medium heat; once the bottom is golden brown, flip and cook on the other side.
